Food as Medicine with Geta Maker-Clark, MD
On Thursday, Oct. 14, at 6 p.m. CDT, Dr. Geeta Maker-Clark, a Chicago-area physician widely known for her work with Food as Medicine, led a cooking demonstration for One Earth Members during the fall members-only virtual event. Thyme and Honey Cough Syrup
Thyme and honey cough syrup
2 Tablespoons fresh thyme
1 teaspoon lemon juice
1 cup water
¼ cup honey, preferably raw and local
Directions:
Pour near-boiling water over thyme and steep, covered, for 15 minutes. Strain. Add honey and lemon juice. Refrigerate for up to 1 week. For children 12 months, give 1 to 2 teaspoon every 2 to 3 hours. Teens and adults can take 1 to 2 Tablespoon every 2 to 3 hours, as needed. For children older than 1 year of age: 1 teaspoon every 2 to 3 hours.
Cumin Coriander Fennel (CCF) Tea
Cumin, coriander, fennel tea
1 teaspoon each cumin seeds, coriander seeds, and fennel seeds
Directions:
Combine equal parts of fennel seeds, coriander seeds, and cumin seeds into boiling water. Steep in boiling water for at least 5 minutes, then pour and enjoy!
Great digestive, calming tea after a meal or to sip all day.
